Valentines week YUMMIES ! :)

I made a cake for Nick ... ok and I did have some too

Topped with whipped up Phillidelphia cream cheese; icing sugar and orange zest and Raspberries


In the middle - well both middles are covered with the Philli topping and then the base layer is covered with ... Malteser halves ..



This is a Chocolate and Almond Meringue/sponge cake

Nick is a Choc-A-Holic The cake is a mix of old fashioned beat the butter and sugar to "pale & fluffy" (old gran ma's recipe) then add beaten egg yolks - then GREEN & Blacks tempered chocolate ... fold in flour and chopped almonds and grated almonds and finally, fold in egg meringue ...

You cannot believe how light and delicious this is ... I must make one for the Oystercatchers & Peregrine Falcons e-Group outing lunch, with PeterD this year

Nick gave me a "Crispy Creme" creme patisserie filled doughnut (because I cannot make them )



NOW to get the bicycles out to cycle off the 2 stones overweight ...

Hi Dave, it will depend on when the Peregrine Falcons arrive and chicks are about ... so its a bit early to post yet ... ALTHOUGH I could put up an event so interested can be kept up to date quickly good idea Dave, shall do ...

My other half's started on a diet, so looking at cakes is as close as I get.

John "this" as a "slice in a box" travels well ... so next time I make one I can post a slice to you in a cool bag, boxed for RMSD deliver by 1pm next day

to eat the cake is like a chocolate meringue/mixed with the softest chocolate sponge - sometimes I make a Galaxy chocolate version, which disappears quicker in this house

I have just started it ... and shall email PeterD ... re day/date (as a few people may be coming some distance and some people, have to work & book time off )

I must say, I have sat in the meadow field below the Peregrine and just so enjoyed observing them for hours above me - I forgot to take photos !

John, it is nice to have a narrow slice I always share with someone and this time, one of our little lads was here on the Friday as school closed for INSET training day ... Freddy helped me make the cake ... and took a little more than half home ... as he was off to grandparents with mum and dad for school half term ... and they all shared it ... no one complained ... except for wanting more next time

PS Phillidelphia comes LOW FAT or you can use Creme Fraiche; the whole thing has 4oz butter ; sugar and flour - its the egg meringue which makes the volume and most of that is air ! It really is very healthy with the Raspberries being 1 of 5 a day ... and all the antioxidants in Raspberries too it ought to go on Diet plans ... and Green & Blacks choc is 70% cocoa solids (that gives you a WoW feel good factor!)

Yours is what I call 'Death by Chocolate and Cream Cake', Chevvy!

In raising my kids I forbad them to use the phrase, "tastes nice".
Salina made a Black Forest Cake with real Cognac for my birthday.

As not to offend her and to spare them from illness I ate most of it myself

BELIEVE ME ... IT WAS SICKENING BUT I LOVE MY KIDS
AND CAN'T UNDERSTAND WHY THEY HATE ME! ! !

your daughter Selina, likes baking as much as I do (I am not too fussed with eating what I cook, more than a taste - I do enjoy the making!) so I guess I am Lucky to have Nick and other about, to EAT IT ALL

Well Mark, mine would take at least 5 days to get to you unrefridgerated and I think the "Customs" would bin it as only non food and plant items are allowed in to AUS ... and by that time it would be "walking on its own legs" ... not a pretty sight
